Colossi 5 - 8
Use your Ancient Sword to guide you east. Move around the ravine's ledge, past the Altar at G - 4, then continue east through the mountain pass. Here you will come to a water temple of sorts (H - 4). Hop off Agro and hop into the water and swim straight at the main gate of the temple. Once there, swim underwater (hold "R1") through the archway, then pop up on the other side. Jump and grab your way to the top of the central pillar, then run forward along the bridge and up the stairs. Here you'll spot Colossus #5.

Colossus #5 will park himself atop a high pillar. Jump through the opening in the gate in front of you, and fall down to the water below. Swim to one of the low platforms directly in front of you. Once on top of one, arm your bow and arrow, and take aim at the parked Colossus. This will make him aware of your presence, and will cause him to dive bomb you. Wait for him to get close to you, then, just before he makes contact, jump up in the air, and grab onto a chunk of fur on either side of his head.
Once you're riding the flying Colossus switch to the Ancient Sword to spot the three vital signs. One, the easiest to stab, is on his tail. The other two are on the far ends of each of his wings. I opted to go for his tail first. Feel free to walk on the back of the Colossus, but be prepared for him to fly at an angle. This is why going for the tail is easiest, as there's always fur to grab onto along the way.
Once you've stabbed away the vital sign on the Colossus's tail, head for the two wings. You must be careful in going for the wing vital signs, as you'll have to cross an unfurried portion of the Colossus wing, meaning you must wait for a solid and upright glide. If the Colossus turns or flaps his wings while you're running across the bare portion of the wing, you'll, most likely, end up back in the water. Since the wing vital signs are so difficult to reach, you only have to stab each one twice to get it to disappear. Do your best to get both stabs in before you get knocked off. Actually, do your best not to get knocked off at all.
If you do find yourself in the water again, swim to the closest platform and, again, shoot at they flying Colossus to get his attention (you'll know you have his attention when he squawks). Grab onto him when he swoops and repeat the process.
Ride SW and into the forest. Once in the forest you'll lose your light, but continue SW to the west path at E - 5 (if you reach the overlook you've gone a bit too far, move directly west from it and you'll find the path). Take the path down to the sands below, and let your sword guide you to the temple build into the cliff's wall (D - 6). Find the ground entrance then climb over the obstacles and work your way forward through the underground temple, where you'll eventually come to a quick cutscene showing you a large temple wall. Run up to the ledge and fall off. As you're falling, hit "R1" to grab onto the wall. Continue to drop and grab, drop and grab, until you make it to the bottom. Once at the bottom, Colossus #5 will be revealed.
Your goal is to make it to the opposite end of the arena and into the protection of the pillared ruins at that opposite end. Run north and jump over the short pillars and walls in your way. Don't worry about the Colossus smashing them, just keep heading north to the protection of the ruins. Once inside that protection, you'll have a nice view of the beast's feet. Wait for the Colossus to lower his head and look into the ruins. If he doesn't do it on his own, shoot one of his furry hands to get his attention. When he lowers his head, make a running jump for his beard and grab on.
Climb the beard to the beast's back/shoulder area, where it's relatively safe to let go of the beast's fur and regain some grabbing strength. Once your meter has been refilled, head to the vital sign on top of the Colossus's head. The Colossus will move his head around a lot, making it difficult to stab him. Just be patient and wait for the right moment. If you need to, return to the back/shoulder area to regroup.
The Colossus's second vital sign is on the lower left section of his back. Climb down to it and begin the stabbing ritual. Again, feel free to return to the back/shoulder area to refuel on grip juice.
Ride north, using the land bridge to cross the ravine. Take the upper path and ride into the open field. Notice the Ancient Sword aims you NW, or straight into a cliff. Since you can't pass through cliffs, ignore the light of the sword and ride straight north, with the aqueduct on your right, and the large cliff to your left. Ride to the end of the cliff structure, then head west. Pass the Dried Marsh Altar (E - 1), then continue west and up the hill with the ruins on top of it. Your sword won't guide you directly there, but, trust me, it's where you want to be. At the top you'll be given a quick cutscene, showing you you're in the right place (D - 1).

Pass through the narrow archway and cross the bridge. Dismount and jump straight down into the water below. Here you will be shown Colossus #7, an underwater beast with electrically charged spikes. Position yourself so you're swimming directly above him, in the same direction he's swimming. Eventually, the beast will rise from the water. If you followed my swimming instructions, you should be in prime position to grab onto the fur of his tail when it surfaces. Do so and hold on until the tail surfaces again (note, the grip meter functions here as a breath meter).
When the tail surfaces again, run toward the first spike, yet don't get too close. The spike will emit an electrical charge circle when it hits water. You don't want to be within that charge circle or you'll be heavily damaged. Grab onto the beast's fur and continue to ride at a safe distance from the spike until you get a good idea of the size of the charge circle. Once you have that, position yourself just outside of it, then, with the beast surfaces, run toward the spike and locate the blue light being emitted from its base. Stab that blue light to de-electrify the spike, then hang on, as you'll be going under water again.
Continue to work your way up the back of the beast, de-electrifying spikes as you go. On the head is where you'll find the one vital sign. Stab it until you defeat the beast.
Ride SE, in the direction your sword guides you. Move through the cliffs to the south side. When you emerge from the cliff passage, continue riding in that same SE line, straight through the circular opening in the cliffs in front of you (G - 6). Ride through it, then across the land bridge with the pretty waterfall to your left. Eventually you'll come to a temple built in the middle of a small lake. Ride or swim to it, then pass through the open doorway on its west side (G - 6).
Work your way through the temple to the room with the two tall and fiery pillars. Climb up either one, then jump to the nearby bridge and follow it west to the next room. Drop into it, then climb out the opposite side. Continue forward until you are given the short cutscene, showing that you are in the right place, a colosseum.

On the top level of the colosseum run right or left to find the stairs down (along the outer rim, behind bars), or, continue around until you find a large hole in the colosseum's inner wall/floor, which allows you to see straight into the arena below. I opted to jump down into the arena through this hole, grabbing onto whatever I could along the way. Truth be told, you don't even have to drop into the arena, but doing so does get the attention of the Colossus, provides you with a proper introduction, teaches you what to do when you are, inevitably, in the arena, and does no harm, so I suggest dropping in.
Once you have the attention of Colossus #8, your first priority is to avoid the electric spikes he shoots from his mouth, each one creating a dangerous electrical field. Your second priority is to lure the Colossus up the colosseum walls. To do this, climb the stairs out of the arena, then work your way up to the next complete level. Run around until you find another wall/floor hole, and look for the colossus. He should be climbing a wall, looking for you. If not, shoot an arrow his way to get his attention. If he climbs straight up at you, run around to another hole, as you'll need a good vantage point and some distance between the two of you.
When the colossus climbs to a decent height on the wall, shoot any one of his four legs (in the glowing white area) with an arrow. This will temporarily paralyze the leg, making it lose its glow and its grip. Shoot one more to make the colossus fall down into the arena, exposing his belly and his two vital signs. Fall down into the arena, climb the colossus (using his head or tail) and stab the beast as many times as you can before he regains consciousness. From what I could gather, the farther he falls, the longer he'll be knocked out. When he wakes up, jump off and before he flips over, then repeat the process until he dies.
